Chianti Classico Riserva DOCG, Castellare di Castellina
The Chianti Classico Riserva di Castellare di Castellina was born in vineyards located in the municipality of Castellina in Chianti.
It is produced 95% with Sangiovese grapes and 5% with Canaiolo grapes, harvested in October. Fermentation takes place in stainless steel tanks at a controlled temperature of 28 ° C for 18-21 days. Subsequently the wine ages in barrique for 15 months, and for further 15 months in bottle.
This Chianti Classico is characterized by a ruby red color. The nose opens with an intense floral bouquet, among which the violet stands out. On the palate it is fine, dry and harmonious, with a pleasantly tannic finish.
Perfect to accompany red and white meats, it is ideal in combination with roasts, noble poultry and aged cheeses.
