TYPE OF WINE: Red

VINIFICATION: The harvest is done by hand. Grapes are carefully selected, a second time gently destemmed and pressed. Meticulous alcoholic fermentation takes place in temperature-controlled open-cap stainless steel fermenters. Grape maceration lasts about 20 days for Cabernet Sauvignon and 16 days for Petit Verdot.

AGEING: The 'aging takes place separately in new French Oak Tonneaux for a period of 24 months. There is then a subsequent blending and a further period of aging of at least 12 months in bottle before release

AROMS: Intense, rich and very elegant, of wild fruit, morello cherries, chocolate, tobacco and sweet spices

IDEAL WITH: Pairs well with grilled meats, roasts, stews accompanied by mushrooms or with roasted game
