

TYPE OF WINE: Sparkling wine
VINIFICATION: Alcoholic fermentation in steel tanks involves maceration of the Pinot Noir with the rosé skins for one night. The cuvée matures during the following spring. The wine is then bottled with 24 grams per liter of sugar syrup and selected yeasts. Aging takes place in contact with the yeasts for at least 24 months.
AROMAS: Elegant notes of wild berries and ripe fruit, well blended with delicate aromas of yeast and bread crust.
IDEAL WITH: Hot fish appetizers, shellfish, oysters, sushi-sashimi, fish tartare-carpaccio, medium-aged cheeses, spaghetti with clams, cold cuts and cured meats.
