

TYPE OF WINE: Sparkling wine
VINIFICATION: Soft and progressive pressing of the grapes with separation of the musts. Alcoholic fermentation takes place in steel tanks. The cuvée is fully matured in the spring following the harvest. It is then bottled with 24 grams per liter of sugar syrup and selected yeasts.
AROMAS: Ample hints of white fruit and subtle citrus notes.
IDEAL WITH: Cold cuts and cured meats, medium-aged cheeses, smoked fish appetizers, mixed fried fish, swordfish, white meats, sea bass, octopus salad.
