Sparkling wine produced with 100% Pignoletto grapes, vinified with soft pressing and fermented at a controlled temperature of 16°. Autoclave refermentation occurs at a controlled temperature of 15-16° through the use of selected yeasts. Another short period of aging on the yeasts follows.
In the glass a straw yellow color with greenish streaks and a fine perlage. On the nose a very immediate and dynamic bouquet in tones of lily of the valley, jasmine and grapefruit, with a touch of basil on the finish, on the palate fresh, young and wild with notes of almond and citrus.
As an aperitif, it is also combined with butter and sage gnocchi, spaghetti with tomato and basil, raw cuttlefish tagliatelle, pecorino romano.
