VINIFICATION: Pressing is carried out at low pressure.
The must is kept at a low temperature in steel tanks.
Fermentation is carried out partially from the must.
The entire process lasts about 40 days at a controlled temperature
of 14-15 °C.
AROMAS: refined and characteristic bouquet composed of fruity (green apple, pear, citrus) and floral (white flowers, acacia, wisteria, lily of the valley) notes, hints of sage, and a touch of spice.
IDEAL WITH: perfect as an aperitif or in the production of numerous cocktails. With meals, it can accompany vegetable or seafood first courses.
Recommended with: sushi and raw fish, vegetarian dishes, pizza, eggs, seafood
